Raclette

A traditional Swiss dish and one of Chef Fred's favourites. This cheese is melted and drizzled over your most loved charcuterie, potatoes and vegetables.

Comte

A semi-hard cow's milk cheese that is great for melting or served at room temperature. Comte has a nutty flavour and aroma but hints of salt, smoke and fruit can also be detected.

Camembert

A soft and creamy cow's milk cheese that has a surface ripened rind. A popular cheese from Normandy that goes great with compote and your favourite cracker.

A semi-hard ripened cheese that has a strong, tangy taste similar to cow's milk cheddar.

Chateau Bourgogne

This is a traditional style triple cream soft-ripened cow's milk cheese.

Tomme De Savoie

Coming from the French Alps, this is a semi-hard cheese. Tomme de Savoie is made from raw, skimmed cow's milk after the cream has been drained off to make butter. This makes for a low fat content, about 20-40%.

Our very own Canadian cheese. An incredibly creamy goat cheese wrapped in an ash layer. A must try.

Blue D'Auvergne

A soft, cow's milk blue cheese. With a bloomy rind and a strong aroma, this blue has definite salty and grassy notes.

Munster

This cow's milk cheese gets it's name from the monks who perfected it! It has a pungent aroma but savoury flavour.
